ALL ABOUT LITTI
Our Story
Litti is a snack food found in India's Bihar state; it consists of balls of wheat and sattu (powdered gram or lentil) formed into balls with spices, and then dipped in ghee (clarified butter). The litti are traditionally baked over a cow-dung fire, served with chokha (a vegetable preparation of roasted and mashed eggplant, tomato, and potato).
Chokha not to be confused with traditional male dress of the peoples of the Caucasus. It is a vegetable preparation of roasted and mashed eggplant, tomato, and potato with a flavour of Mustard Oil, Freshly Crushed Garlic and Chilli.
Baingan bharta (Mashed Eggplant) is a South Asian dish bearing a resemblance to baba ghanoush. Baingan bharta is a part of the national cuisines of both India and Pakistan. It is primarily a vegetarian dish that comprises bhurtha (minced vegetables) made from eggplant (baingan) which is grilled over charcoal or direct fire, to infuse the dish with a smoky flavour. The smoked eggplant is mashed with fresh cilantro (coriander leaves), chili pepper, onion and mustard oil.[1] Traditionally, the dish is often eaten with an Indian flatbread (specifically roti or paratha) and is also served with rice and/or raita, a yogurt salad. Baingan bartha is also eaten in Bangladesh.
Sattu is a food-stuffing in South Asia consisting of a mixture of ground pulses and cereals. The dry powder is prepared in various ways as a principal or secondary ingredient of dishes. It originated in Bihar, India but is popular over a wide area of India.
